So, it’s coming up to summer, which means lots and lots of eggs. And for some of us that means way more than we can sell or use or sometimes even give away. The best thing is to preserve the eggs so that we have them to use when the hens are not laying as regular over the winter season.
Before I get into how we preserve eggs here at Happy Hen Hideaway, I’d like to talk about what we don’t do and why.
- Freeze – while freezing is a fine way to preserve eggs, freezer space is at a premium here.
- Water Glass – actually have not tried this method and maybe someday I will but currently have no reason to.
- Buttered – I have buttered eggs and it worked great, but you need somewhere cool to store and currently the refrigerator is the only cool space we have. If I had a basement, I’d do more buttered eggs.
- Pickled – I don’t like pickled eggs


Dehydrating Eggs:
Easier Than You Think
Equipment
- Dehydrator with adjustable time and temperature
- Fruit roll trays for dehydrator
- Blender
- Freezer Bags
- Spice / coffee grinder
- Mason Jars
- Jar vacuum sealer
Step 1
Crack 10 eggs into your blender and blend well. 10 eggs fit perfectly on each of my fruit roll up trays. Place rack with a fruit rollup tray into the dehydrator and then pull out just enough to fill tray. Then carefully slide fully into the dehydrator. I start at the bottom and work my way up. Continue until all eggs are gone or your dehydrator is full.
Step 2
Set the dehydrator no higher than 140 degrees Fahrenheit for 12 hours. At the end of 12 hours check and make sure all the eggs are dry and crumbly. It’s ok for it to be a bit oily from the fats in the egg yolk but should not be wet or sticky at all. If any of the egg is still sticky or wet, place back into the dehydrator for additional time until all is dry and crumbly.
Step 3
Once the eggs are all dry and crumbly, place them in a freezer bag. Freezer for a couple of hours.
Step 4
Remove bag from the freezer. Use a spice grinder or coffee grinder to grind up the dehydrated eggs until they reach a fine powder. Place in a mason jar. Add 1 oxygen and 1 moisture absorber into each jar. Place the middle of a 2-part lid. Do not use the band. Place jar vacuum sealer on the jar and seal.

To Reconstitute eggs:
1 TBS dehydrated egg powder and 2 TBS water or milk. Let sit for 10 minutes or so before use.
I could not tell the difference between dehydrated and fresh cracked scrambled eggs.
You can use your reconstituted eggs anywhere that raw eggs are used. You can also separate eggs before dehydrating. Powdered egg whites can be used for meringue and yolks can be used in things like homemade mayo.
